Baked Macaroni & Cheese

When it comes to my taste buds, I am and always will be Italian. As a kid, I was exposed to a vast assortment of pastas and pasta sauces. This has ultimately shaped my preference in food as an adult. Call it childish, but really well done Macaroni & Cheese will always be one of my favorite meals. My mom has been making her rendition of the high-dairy delicacy for many years, and recently I have honed in on my own special twist.

For those who tend to shy away at the thought of “From-Scratch” cooking, fear not. This 8 ingredient dish takes all of 30 minutes to make. My recipes may taste gourmet, however they are always very simple and hassle-free.

Before you get started, note this: Due to the Cart-Blanche simplicity of this recipe, you are able to make virtually any variation you can possibly imagine. What I have provided you with is merely a guideline. So if you’re feeling creative, or just need to be a control-freak and do it your way, feel free!

*DISCLAIMER* My way is the right way… It’s always been the right way. I strongly advise against your creativity and desire to adjust my masterpiece. Consider yourself privileged to have even been granted this gift of cuisine in the first place.

Now then… Below are a list of the ingredients you will need to concoct this cheesy feast. As always, the measurements are accurate and scaled according to serving size. Below will serve 4 very hungry adults:

Elbow Macaroni 500-600g

Butter 4 (generous) tbsp

Flour 4 tbsp

Whipping Cream (18%) 2 cups

Extra-Old Cheddar Cheese 2 ½ cups

Parmesan Cheese ½ cup

Dried Breadcrumbs ½ cup

Olive Oil 1 tbsp

1. Preheat the oven to 425 Degrees

2. In a large pot, boil the Macaroni and cook until Al Dente

3. Strain the Macaroni and set aside to cool

4. In a medium sized pot, melt the Butter on low heat.

5. Once the butter is melted through, add in the Flour and continuously whisk until creamy

6. Slowly pour in the Cream and continue to whisk until all ingredients have mixed together

7. Turn the heat up to medium and bring mixture to a boil (stirring constantly)

8. Turn the heat down to low, and add in the Cheddar cheese

9. Turn the heat down to simmer, and slowly stir the mixture until all ingredients have melted together

10. Evenly distribute the olive oil to a size-appropriate baking dish

11. Pour the Macaroni into the greased dish and evenly distribute it throughout

12. Slowly pour in the cheese mixture and stir it in evenly

13. Sprinkle the Macaroni & Cheese with the Parmesan and Breadcrumbs

14. Bake in the preheated oven for 15-20 minutes.

15. Let stand for 5 minutes and enjoy that cheesy goodness.

16. Take a minimum of 3 days off of your life for all that Cream and Cheese you just consumed #justsayin

I’m a big fan of mac & cheese, and this is a proper looking recipe. Doubt I’ll ever make it considering the amount of butter and cream, but hey someone will! LOL.
